Savory Oatmeal

So I know that breakfast can be a tough meal to keep gluten-free.  As someone who regularly ate toast, English muffins or bagels for breakfast, I’ve been trying to learn new things to try.

I don’t know how much you might follow “trends” in food, but for the past two years or so, Avocado Toast has been huge.  I see photos of variations of it probably two or three times a week in social media.  And before I changed my diet, I was one of the people who sang the praises of it.  For about two or three months after the GF change, I mourned the loss of my beloved avocado toast.  Until I realized I can still have it!  (sorta.)

Welcome to the world of savory oatmeal.

Typically, yes, oatmeal is eaten with fruit, yogurt, brown sugar, maple syrup, other sugary things, etc.  But it can just as easily be a savory dish.  (Not to mention, I learned that eating grain and fruit together makes me ridiculously bloated.)

This is a breakfast I have ALL. THE. TIME.  Right now, I love it even more because it’s such a treat to warm up with on these cooler mornings.

On with the instructions (not really a recipe)!

 

Oatmeal with Avocado and Poached Egg

  • 1/2 cup Gluten-Free Oatmeal (I love Bob’s Red Mill, anything but instant!)
  • 1 cup water
  • Pinch of salt
  • Splash of white vinegar
  • Egg
  • 1/2 Avocado
  • Sriracha (optional – but why wouldn’t you?)

Cook the oatmeal in a small saucepan as per instructions – 1:2 ratio, oatmeal to water.  Add salt.

In another small saucepan, bring water to a slow boil/simmer.  Add vinegar.  Slowly and carefully, add egg and cook until egg white is completely solid, usually about 4 minutes.  Remove egg with a slotted spoon.  You can carefully place the egg on a paper towel to remove some of the excess water, but it really doesn’t bother me.

Now just assemble!  Put your cooked oatmeal in the bowl, top with egg, sliced avocado and Sriracha!  Dig in and enjoy!

I’m glad I’m not a food blogger by trade.  Making this meal this morning, and taking photos before I could eat, it was torture!  I wasn’t too picky about how the photo came out, mostly because I just wanted to eat!
