It’s my goal every year to get something green past my roommate’s lips. We joke about how picky an eater she is, and so I’ve made it my mission to get some healthy stuff in her every once in awhile. A couple years ago, I hooked her with avocados and pistachios, and last year, I even got her to try brussel sprouts! As this year is getting closer and closer to over, I was searching for a creative way to get her to eat something green. Thanks to my CSA share, I had a huge bag of spinach and some squash. After some Pinterest searching, I found the perfect way to get her to eat something green without having to chew it. Occasionally, I will be sharing some food posts here. After all, food is probably my favorite thing. With my recent dietary change to gluten-free, I sometimes have a hard time finding things I like to eat that are healthy and easy. I know there are a lot of websites and information out there, and I’ve seen my fair share of them. However, I can’t count the number of times they have something special and unique that I can’t find anywhere. Talk about frustrating. My plan is to include easy things to make, for one person, without using something too “exotic,” for lack of a better word. If it’s something out of the ordinary, I’ll be sure to give a heads up.
